I have run my 1979 bike through all sorts of outside temps, from freezing, to desert hot, stock fan, no water wetter, 50/50 mix of green and tap, NO overheating issues, even when idling. It all comes from betting all the variables, tuning, valve adjustment, carb balance done right. Off tune, problems will surely occur.
