Pretty much what I'm in the middle of. A slightly different way of removing the seats was done here using the frost plugs. I just laid a weld bead on the inside of the seats and they fell out. Our heads don't have a "standard insert, so I've purchased slightly oversize inserts and I have to machine down the OD of the inserts. Head shops would normally try to size a seat and then cut the seat pockets to fit the selected seats. Our heads have a very narrow web between the intake and exhaust pockets and I felt it was too narrow to cut any larger pockets for fear of the head cracking down the road.
The Serdi valve machine is $150K and a treat to work with as you can see in the video. Any shop with this kind of equipment rates highest in my book. This type of work is getting rarer to find a shop to do since all the rebuild shops are getting their heads and blocks from the manufacturer remand suppliers. Only the racing fanatics are supporting the automotive machine shops. So be prepared to hand out some coin when you manage to find a really good shop to use.
If they have a Serdi, they probably also have a precision boring head and prescision hone. I wouldn't use anyone with less than this.
