My carbs are performing extremely well after strip, clean and new parts even though I've not done any balancing etc. It starts straight away on full choke but chugs a little on 1000rpm, after a few seconds I drop the choke lever half way down and it sits at 2000rpm running smoothly to warm up but I have to hold the lever in place as it snaps straight down if I let go. Not sure if this is normal or what I can do to remedy it so I can leave the bike on half choke for a minute to get warm and then tickover with the choke off?

Best guess here is that you're missing one of the washers or the spring on the retainer bolt that holds the choke lever. Under the head of that shouldered bolt should be a spring, then a plain steel washer, then a duracon washer (fibre washer) then the choke lever, then another plain steel washer.

This should help www.partzilla.com/parts/search/Kawasaki/...ETOR+ASSY/parts.html

Sometimes the shoulder on the shaft of the screw can tighten against the choke lever when you install it instead of the carb body - so it feels tightened.

Then when you move the choke lever it drops into the arc travel recess and becomes loose.

There is only the smallest amount of a turn between being loose and locking up but it's working now so I'll have a closer look when it comes in for the winter, I've got a spare set to rebuild as well so all bases covered carb wise...hopefully!
