I've had spare front and back rims complete with disks for ages (bought with the intention of easier tyre changes).

Just this last week or two I bought a pair of fork bottoms, spindle and spacer to use as a rig to work out dimensions for adapter plates.

1980 KZ1300 B2 Touring/A2
1990 ZZ-R1100 C1
