Ok. I think the mystery is solved: My screen was zoomed in so far, I wasn't seeing the 'insert video' button - I was using the link button. Still a bit weird though as the first time I used the link button the video showed up embedded.

Hmm. No video or link shows up using Video Insert. What button are you using?

OK. Think I have this figured out. Use the 'provider' option with the URL in the "ID" field. Nope. that doesn't work either. I'm Stumped. OK Finally figured it out. Using the provider option with the ID extracted from the URL. Even weirder though, just pasting the raw Video URL without any insertion button seems to work.
