I just bought 4 ft of fuel injection hose ($5.40 per ft!!! Jeezus) I'll try putting things back together tomorrow and get the old girl running to see if she's cured. SOmething else came to mind...possibly there is dirt in the fuel rail which could explain this issue. How would you go about blowing it out?

It would still run with 2 out of 3 working wouldn't it? My issue is that it slowly, slowly dies, but I can prolong the misery for an extra mile by choking it, so that suggests fuel. This really bugs me.

Yes I thought it was fuel starvation too on mine, as the engine would cut out after about 10 mins. of running, then if I let it sit for 10 mins. it would start right up on the button & run fine. Turned out it was the coils breaking down with heat, then when they'd cooled some they'd work again. The coils I'm talking about are the HT ones under the tank, are yours still original?

Pretty sure they're original coils. How do I check them to scratch that off the list.
Here's my bike:

It starts and runs like this with no issues until I get far enough from the house that I can't walk it back. It started last Fall and now I want it running right.

One of the biggest tell tales is a longitudinal crack down the side of the coil body. you can't miss it. All 3 coils of mine had a crack almost 3" long and about 1/8" wide.

Okay, I'll check them tomorrow. Wouldn't the bike run rough though if the coils were shorting out?

Well Scorpio that sounds wicked to me with no problems, it must be fuel starvation of some sorts. I have and others have experienced inner tank liners breaking down, it might be worth pulling the tank off draining it and ensuring you don't have that problem and blockage of your fuel tap strainer is not taking place. I have just recently had to empty a tank full of broken lining it was honestly in some places strips of 12 inches long. People are referring to ethanol causing a problem as I am sure others will comment on, might just be a good idea to look inside that tank
