OK guys, thank you for all of your input.

Bearing in mind all of your advice, I have decided that the problem lies with the oil level sensor.

I have disconnected the green plug behind the R/H side panel and - so far so good. The light comes on when I turn the key on and goes out on start up as it should.:)

I can live without the sensor as I can check the level through the sight glass and it has never been an oil burner. If the level does get very low, the pressure light will flicker on as the oil shifts in the sump anyway, but it won't get to that.

It's just another item I have removed or disabled to put into the box containing the centre stand, fuel pump, and clutch start inhibitor.

Thanks again
