One of the main problems with the manual is that it fails to tell you specs on "as new" condition which is what you're trying to achieve when rebuilding.

In regards to your question, Hastings is a manufacturer of piston rings and their engineered answer to your question is the minimum ring end gap should be .0035" per inch of bore. So for the KZ1300 with a 62 mm bore which is 2.44" X .0035"= .0085" . I would aim for .010"- .012" ring end gap to be on the safe side.

For reference, here's the Hastings site for those who wish to enhance their knowledge base.

Edit note- I forgot to mention that I love the nice clean organized workshop. Kudos to you. I'm sure your rebuild will go well !!

When setting ring gap ALWAYS use the specification the form the manufacturer of the piston rings.

If that is not available then use the rule of 4. .004" per inch of piston diameter minimum.(for normal street applications)

64mm is about 2-1/2" so you would want no less than .010".

Call the vendor or manufacturer if you can.

Nothing sexier than a Kawi 6 cylinder block. Well done, and good luck!
